PACKAGING Individual retail units are flow-wrapped in multilayer barrier film and nitrogen flushed to reduce oxidation and increase shelf life. The flow-wrap packaging is home compostable. The packaging film is certified to OK Compost�s Home Composting Standard. Shelf Packs and cases are manufactured from recyclable, sustainably-forested paperboard.

Why isn't there a dairy-free Sun Cup? We started Seth Ellis Chocolatier to create
amazing, premium chocolates. We knew we could build a successful
high-end chocolate company within the limits of organic, nut-free and
gluten-free production. We chose to be organic because it's the right
thing to do, gluten-free because Rick's wife and kids are
gluten-allergic, and nut-free because we have some friends with serious
nut allergies. We didn't anticipate we'd be in a situation where
dairy-free was required, as well! And, building a luxury chocolate
business to compete with the best European chocolatiers without cream
for ganaches or milk chocolate strained even our fertile imaginations.
Fast forward three years to 2009, and the launch of Sun Cups.
We
have milk in our shop. We use organic heavy cream in our ganache and
caramel, we have an exquisite milk chocolate and we use white chocolate
here and there for fillings and decoration. When we created the filling
recipe for Sun Cups, we used some white chocolate, made with whole milk
powder. We're using a blend of white chocolate and cocoa butter because
using only cocoa butter is cost prohibitive. We're trying to keep
ingredient costs down, both to keep the cups affordable and to make
sure we can afford to make them!
Unfortunately,
the issue we face in creating a dairy-free dark chocolate Sun Cup is
larger than just eliminating the milk products from the filling. In our
shop, we don't have separate machinery for dark and milk chocolate.
Although we're careful to minimize contamination between milk and dark
chocolate, we do have small amounts of milk getting into the dark
chocolate. As we grow we will definitely keep the needs of those with
dairy allergies in our focus. As the dairy-free market grows we'll
continue to explore ways to create a dairy-free Sun Cup.
